[fried chicken sandos + homemade fries]
Ingredients
- 4-6 chicken breasts butterflied
- 1-2 cups inkomazi or buttermilk
- steak & chops seasoning
- 1 tsp garlic salt
- 1-2 tsp chilli flakes
- 1 tsp paprika
- 1 tsp cayenne pepper
- salt
- black pepper
- 2 cups flour
- 1 cup cornflour
- 1 cup mayo
- 1-2 TBSP hot sauce
- 1 tsp garlic powder
- hamburger buns (toasted)
- lettuce
- tomato
- gherkins
Method
- In a large bowl, combine inkomazi, garlic salt, chili flakes, paprika, salt, and pepper.
- Mix well to combine and then add the chicken breasts, making sure everything is coated.
- Cover with cling film and refrigerate for 4 - 24 hours.
- Hereafter, in a large bowl combine flour, cornflour and all seasonings used to marinate the chicken. Stir through to combine.
- Remove the chicken from the fridge and into the flour mixture, pour some of the inkomazi mixture to give it some texture.
- In a medium-sized saucepan, on medium heat, add enough oil to deep fry.
- Place the chicken into the flour mixture and coat evenly making sure to get into every crevice.
- Dust off the excess flour and once hot, add the chicken to the oil and fry for 3 minutes on each side (it must be golden & crispy).
- Remove from oil and drain on a paper towel.
- Combine mayo, hot sauce, and garlic powder and spread this mixture on both halves of the bun.
- To the base add lettuce, tomato, chicken, and gherkins and close with the top bun.
- Serve with crispy fries and enjoy!
