[fried chicken sandos + homemade fries]

Ingredients

  • 4-6 chicken breasts butterflied
  • 1-2 cups inkomazi or buttermilk
  • steak & chops seasoning
  • 1 tsp garlic salt
  • 1-2 tsp chilli flakes
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • salt
  • black pepper
  • 2 cups flour
  • 1 cup cornflour
  • 1 cup mayo
  • 1-2 TBSP hot sauce
  • 1 tsp garlic powder
  • hamburger buns (toasted)
  • lettuce
  • tomato
  • gherkins

Method

  1. In a large bowl, combine inkomazi, garlic salt, chili flakes, paprika, salt, and pepper.
  2. Mix well to combine and then add the chicken breasts, making sure everything is coated.
  3. Cover with cling film and refrigerate for 4 - 24 hours.
  4. Hereafter, in a large bowl combine flour, cornflour and all seasonings used to marinate the chicken. Stir through to combine.
  5. Remove the chicken from the fridge and into the flour mixture, pour some of the inkomazi mixture to give it some texture.
  6. In a medium-sized saucepan, on medium heat, add enough oil to deep fry.
  7. Place the chicken into the flour mixture and coat evenly making sure to get into every crevice.
  8. Dust off the excess flour and once hot, add the chicken to the oil and fry for 3 minutes on each side (it must be golden & crispy).
  9. Remove from oil and drain on a paper towel.
  10. Combine mayo, hot sauce, and garlic powder and spread this mixture on both halves of the bun.
  11. To the base add lettuce, tomato, chicken, and gherkins and close with the top bun.
  12. Serve with crispy fries and enjoy!
